Scrambled eggs for breakfast are simply delicious. But what vegan alternative is there for this egg dish? We have the solution: vegan scrambled eggs with chickpea flour. With just a few ingredients, you can conjure up a healthy and nutritious breakfast, which is also great for your juice cleanse preparation or post-processing. Ingredients (1 portion):
75g chickpea flour
¼ tsp kala namak salt
¼ tsp turmeric
225ml water
oil
Salt & pepper
Chives
Preparation:
- Put the chickpea flour, kala namak salt, turmeric and water in a bowl and mix the ingredients until there are no more lumps.
- Pour a little oil into a pan, then add the chickpea flour mixture and turn the heat to the lowest setting. Add a little oil to the mixture.
- After about 1 minute, start to carefully push the thickened mixture into the center of the pan with a spatula so that you can reach the liquid mixture at the bottom of the pan.
- Work slowly but steadily to give your vegan scrambled eggs the right consistency.
- After approx. 5 minutes, put a lid on the pan and leave the chickpea flour underneath to cook for another 5 minutes. You can turn off the heat at this point.
- Finally, season with salt and pepper and garnish with chives. Enjoy your meal!
