This coconut almond cake with Skyr Drink Passion Fruit is the perfect blend of moist, light, and aromatic. The fruity skyr gives the batter a natural freshness, while coconut and almonds add a delicate nutty note. Completely egg-free, the cake turns out wonderfully fluffy – ideal as a smart snack, for afternoon coffee, or as a small dessert without a guilty conscience.

    Almonds
  • 2 TBSP.
    Coconut flakes
  • 2 TBSP.
    Chia seeds
  • 6 EL
    Water
  • 250 ml
    LiveFresh Skyr
  • 1 TSP
    Baking powder
  • 2 TBSP.
    Honey
  • 1 TSP
    Lemon juice
  • Salt

    Prepare the chia seeds: Mix the chia seeds with water and leave to soak for 10 minutes - this replaces 2 eggs.

    Prepare the dough: In a large bowl, mix together the flour, coconut flour, ground almonds, coconut flakes, baking powder and salt.

    Mix the liquid ingredients: Skyr Drink, Add the swollen chia seeds, lemon juice and maple syrup and mix everything into a smooth batter.

    Bake: Pour the dough into a greased tin or one lined with baking paper. Bake at 175 °C (top/bottom heat) for approx. 40 - 45 mins. Test with a skewer!

    Optional: Once cooled, decorate with coconut flakes or chopped almonds.
