Ingredients
For the wings:
- 1 head of cauliflower (divided into florets, approx. 700g)
- 50 ml soy milk
- 2 tbsp apple cider vinegar
- 50 g flour
- 1 tbsp mustard
- 3 tbsp yeast flakes
- ½ tsp salt
- ¼ tsp black pepper
- 60 g cornflakes (crumbled)
- 60 g breadcrumbs
- 1 tsp garlic flakes
- 1 teaspoon onion powder
- 1/2 tsp mild chili powder
- 1 tsp pepper
- 1 tsp sea salt
- Oil (for coating)
- Fresh parsley (finely chopped)
For the "honey mustard" dip:
- 60 g mustard
- 80 g agave syrup
- 50 ml olive oil
- 2 tbsp lemon juice
- 1/4 tsp orange pepper (or cayenne pepper, optional)
- Salt and pepper (to taste)
Simple preparation
- Preparing the "buttermilk"Mix the soy milk and apple cider vinegar in a container and leave to stand for 10-15 minutes.
- Preheat the ovenPreheat the oven to 200 °C and line a baking tray with baking paper.
- Prepare the wingsPlace the cauliflower in a large bowl, add the buttermilk, flour, mustard, yeast flakes, salt and pepper and mix well.
- BreadingMix the cornflakes, breadcrumbs and spices in a deep dish. Roll the cauliflower in it, spread on the baking tray and brush with oil.
- BakeBake in the oven for 20 minutes, turn and bake for another 20-30 minutes until golden brown and crispy.
- Mix the dipMix all the ingredients for the dip with a hand blender or mixer.
