This vegan stuffed bell pepper is super quick and simply delicious. It is a perfectly nutritious dish with lots of fresh vegetables. They are also ideal as a meal to prepare for your juice cleanse. Ingredients (1 portion):
1 red bell pepper
2 TBSP. kidney beans
2 tbsp corn
1 onion
garlic
5 cocktail tomatoes
Vegan cheese
Olive oil
4 tbsp strained tomato
spice mix
salt & pepper
Coriander
Dark chocolate
Preparation:
- Halve the peppers, remove the seeds and place the halves in a baking dish
- Pour some oil into a pan and sauté the onions in it
- Add the sweetcorn and kidney beans and fry them too
- Then season with the spices of your choice (we use minced meat spice and chili powder)
- Add the tomato purée and mix everything thoroughly
- Season to taste with salt and pepper
- Finally, add a piece of dark chocolate and stir it into the pan
- Then fill the bell pepper halves with the filling and sprinkle the vegan cheese over the bell pepper halves
- Place the baking dish with the stuffed bell pepper halves in the oven at 180 °C for 15 minutes
