Ingredients (2 portions):
160g LiveFresh Low carb high protein pasta
1 avocado
10 -12 mozzarella balls
1 jar of chickpeas
1 handful of rocket
200g cherry tomatoes
1 lemon
Fresh basil
3 tablespoons olive oil
2 tbsp balsamic vinegar
salt
pepper
Preparation:
- The LiveFresh fusilli according to the packet instructions.
- Meanwhile, fry the chickpeas in a hot pan until golden brown.
- Now wash the tomatoes, avocado and rocket and cut the tomatoes and avocado into small pieces, put the rocket to one side and drain.
- Then place all the ingredients in a bowl, add the fresh basil and make a dressing with 3 tbsp olive oil, 2 tbsp balsamic vinegar, lemon juice, salt and pepper and pour over the salad.
