Ingredients:
35g chickpea flour
100ml plant milk
1/2 tsp mustard
25g Planko breadcrumbs
75g Parmesan cheese
25g black sesame seeds
pinch of salt
250g asparagus
Preparation:
- First mix the chickpea flour with the plant milk of your choice
- Stir the mustard and salt into the plant-based milk with a whisk
- Mix the breadcrumbs, parmesan and sesame seeds on a plate
- First dip the asparagus in the liquid batter and then roll it through the sesame breadcrumbs
- Place the breaded asparagus spears on a baking tray lined with baking paper
- Spread a little rapeseed oil on the asparagus spears and then bake the asparagus in the oven at 200 °C for approx. 15 minutes
