Vegan Harira - the Moroccan chickpea soup

Soup always works, doesn't it? For a bit of variety on your plate, we have a vegan Moroccan harira for you. This Moroccan cherry pea soup is super tasty and super easy. What's more, this gentle recipe is perfect for preparing your juice cleanseas it prepares you perfectly for the liquid food. Ingredients (4 portions):

1 Onion

100g Celeriac

2 TBSP. olive oil

240g cooked chickpeas

125g brown lentils or green lentils

1 EL tomato paste

1 ½ TSP salt

½ TSP black pepper (ground)

½ TSP chili powder

½ TBSP. ginger powder

45g flour

10g parsley

15g coriander

400g strained tomato

½ TBSP. black cumin (ground)

½ lemon in wedges

Preparation:

  1. Finely dice the onion and garlic and cut the celery into bite-sized pieces.
  2. Pour the olive oil into a hot pan and fry the onions and garlic over a medium heat.
  3. Add the celery, lentils and chickpeas to the pan.
  4. Add all the spices, except the black cumin, and fry everything together while stirring.
  5. Pour in 1.5 liters of water and bring the soup to the boil, then simmer for another 20 minutes with the lid on.
  6. Meanwhile, mix the flour with approx. 50 ml cold water.
  7. Roughly chop the parsley and coriander and stir into the flour mixture together with the chopped tomatoes and cumin.
  8. When the lentils are soft, add the flour and tomato mixture to the pan, stirring constantly.
  9. Allow the soup to thicken slightly.
  10. Season to taste with salt and garnish the soup with a lemon wedge.
