Vegan pulled mushroom burger

Vegan pulled pork? This version does not consist of substitute products, but of mushrooms. Ingredients (2 burgers):

For the pulled mushroom:

500g king oyster mushrooms

3 tbsp barbecue sauce

1 tsp paprika powder

1 tsp smoked paprika powder

½ tsp pepper

1 tsp sea salt

200ml Hey Wach juice

For the coleslaw:

400g white cabbage

1 small carrot

½ red onion

10g xylitol

A little salt and pepper

25ml vegan cream

35g vegan mayo

1 tbsp white wine vinegar

1 ½ tbsp lemon juice

A little mustard

Preparation:

  1. First clean the mushrooms and then pluck them into fine strips
  2. Then, for the marinade, add the barbecue sauce, paprika powder and smoked paprika powder, salt, pepper and the Hey Wach juice together and set aside
  3. Now wash the white cabbage, carrot and onion and slice into fine strips using a slicer
  4. Next, mix together the remaining ingredients for the coleslaw marinade and then add the white cabbage, carrot and onions, mix well and also set to one side
  5. Now put two pans on, add the mushrooms to one and fry well on a high heat and add the sliced burger buns to the other and also fry briefly until golden brown 
  6. Finally, top the burger buns with the pulled mushrooms and coleslaw
  7. Simply enjoy!
