Gazpacho Andalusia

Gazpacho is a soup made from uncooked vegetables and served cold in southern Spain. It is the perfect starter and particularly suitable for warmer days. The soup is easy to digest, incredibly tasty and can be prepared in just 10 minutes. This recipe is also perfect for preparing for your juice cleanseas it optimally prepares you for liquid food. Ingredients (500ml/approx. 2 portions):

500g vine tomatoes

2 slices of toast

30ml sherry vinegar

60ml olive oil

1 red bell pepper

1 red onion

2-3 garlic cloves

1 cucumber

salt & pepper

Sweetener if required

basil

Preparation:

  1. First halve the tomatoes, cut the cucumber into bite-sized pieces and place both in a blender. Blend until you have a chunk-free soup
  2. Also cut the peppers and toast into bite-sized pieces and add both to the blender together with the onion, garlic cloves, sherry vinegar, olive oil and spices and puree everything thoroughly
  3. Pour the soup from the blender into a deep plate and top with olive oil and basil
