Ingredients (2 servings):
250g black lentils
2 large tomatoes
1 red bell pepper
1 cucumber
spring onions
mint
3 tbsp vinegar
5 tbsp olive oil
Preparation:
- First cook the lentils according to the packet instructions
- As soon as the lentils are cooked, set aside and leave to cool
- Meanwhile, cut the tomatoes, peppers, cucumber and spring onions into small pieces
- Then mix the lentils and mint with the other ingredients
- Now dress the salad with vinegar and olive oil and serve
