Ingredients (2 portions):
3 peaches
1 cucumber
1 avocado
150g cherry tomatoes
100g rocket
50g pumpkin seeds
30g walnuts
200g vegan feta cheese
olive oil
For the vinaigrette:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp lemon juice
1 tbsp agave syrup
1 tsp mustard
salt
pepper
Preparation:
- First cut the vegetables into bite-sized pieces
- Wash the rocket and drain it well
- Then briefly roast the pumpkin seeds and walnuts with a little olive oil and a dash of agave syrup in a pan
- For the vinaigrette, mix the olive oil, balsamic vinegar, lemon juice, agave syrup and mustard and season with salt and pepper to taste
- Now wash the peaches, remove the stones and cut into wedges
- Then fry the peach slices on both sides for approx. 3 minutes until they get a nice color
- Finally, spread the salad on a large flat plate and garnish with the peaches, vegan feta cheese and nuts
