Ingredients (2 portions):
100g rice
2 cups of water
1/2 tbsp salt
2 tbsp coconut oil
1 handful of mushrooms
100g white beans
2cm fresh ginger
1 small onion
1 garlic clove
1 tbsp paprika powder, sweet
1 tsp ground coriander
1/2 tsp cinnamon
1/2 tsp turmeric, ground
2 tbsp lemon juice
4 tbsp yeast flakes
100-200ml plant drink
salt & pepper
6 cherry tomatoes
1 small bunch of fresh chives
Preparation:
- Bring the rice, water and salt to the boil in a pan. Then reduce the heat and allow the rice to simmer gently for 15 minutes.
- Peel and finely dice the ginger, garlic and onion.
- Cut the mushrooms into thin slices.
- Heat the oil in a pan and add the ginger, garlic and onion. Fry the ingredients slowly. Not too hot.
- Stir in the spices and fry briefly. Then add the mushrooms and fry briefly.
- Deglaze with lemon juice and vegetable drink.
- Quarter the cherry tomatoes, chop the chives and stir in both.
- Add the yeast flakes and beans. Bring everything to the boil briefly and then season with salt and pepper and lemon juice to taste.
- Serve with rice and enjoy. Enjoy your meal!
