Ingredients:
For the base:
30g chia seeds
300g chopped almonds
8 soft Medjool dates
3 tbsp cocoa powder
½ tsp salt
4 tbsp coconut oil
For the cream:
300g blueberries (defrosted or fresh)
250ml coconut milk (preferably the solid part)
250ml oat milk
80ml maple syrup
2 tbsp cornstarch
3 tsp agar-agar
1 tsp vanilla extract
Preparation:
Place all the ingredients for the batter in a bowl and mix until you have a smooth batter. Spread the batter in a cake tin and bake at 150 °C fan oven for about 15 minutes. Put all the ingredients for the cream together in a pan and bring to the boil while stirring. Spread the cream over the base as soon as it has cooled. Chill the cake for at least 2 hours. Then decorate to your taste. Have fun baking.
