Vegan falafel made of sweet potato and corn

These delicious falafel made from sweet potato and corn are super tasty and a great change to your diet. The falafel is also vegan, making it the ideal meal for anyone who wants to avoid animal products. You can find out which ingredients you need and how to prepare them in this article. Ingredients (20 falafels):

1 medium-sized sweet potato

2 tsp vegetable oil

1 large onion

2 garlic cloves

40g chickpea flour

800g chickpeas (2 tins)

1 tsp ground cumin

1 tsp paprika powder

1 tsp salt 

½ tsp black pepper

pinch of chili powder

1-2 tbsp ajvar

½ 275g tin of corn

½ bunch parsley

    Preparation:

    1. Prick the sweet potato a few times with a fork. Then place in the microwave and cook on a high setting for 10 minutes
    2. Finely dice the onion and garlic. Put some oil in a pan and heat it up. Then add the onion and garlic and sauté for 2-3 minutes until translucent
    3. Put the chickpea flour in a blender with the canned chickpeas, the fried onions and garlic, the cumin, paprika powder, salt and pepper and a pinch of chilli and blend everything into a coarse mixture
    4. Put everything in a bowl
    5. Scrape the inside of the soft sweet potato with a spoon. Add the mixture to the chickpea flour mixture in the bowl along with the ajvar, sweetcorn and parsley
    6. Mix everything thoroughly and season to taste
    7. Place the bowl in the fridge for 30 minutes
    8. Form flat balls with wet hands and spread them on a baking tray lined with baking paper as soon as the mixture is firm
    9. Put enough oil in a large frying pan and heat it up
    10. Now place the falafel in the hot oil and flatten them slightly with a spatula
    11. Fry for approx. 4 minutes until golden brown. Then turn and fry the other side
    12. Serve with dip and enjoy!
