Ingredients (2 portions):
1 wholemeal baguette
2 stalks of mint
Fresh cress
1/2 onion
1 garlic clove
4 tbsp olive oil
120g peas
½ lemon
pecan nuts
Salt & pepper
Preparation:
Wash the cress and mint and cut the onion and garlic into small cubes. Heat the olive oil in a pan and sauté the onion and garlic. Add the peas and pecan nuts. Squeeze the lemon over the pan. Sauté everything together for 3-4 minutes. Then place all the ingredients (including the mint and cress) in a bowl and puree using a hand blender until you have a creamy mixture. Season to taste with salt and pepper. Cut the baguette into slices and brush with olive oil. Fry it in the pan until golden brown. Chop the pecan nuts into small pieces. Spread the bread slices with the pea mixture and top with cress and pecan nuts. Arrange, serve and enjoy!
