For the pesto:
1 avocado
1 garlic clove
2 tbsp olive oil
1 handful of basil leaves
Also:
300 g spaghetti
Handful of cocktail tomatoes
50g Parmesan cheese
1 packet of pine nuts
salt and pepper
Preparation:
- First cut the avocado in half, peel and puree together with the garlic, olive oil and basil to make a pesto
- Now cook the spaghetti in salted water according to the packet instructions
- In between, lightly toast the pine nuts in a pan
- Now cut the tomatoes in half and add to the drained spaghetti in the pan together with the pesto and pine nuts and mix everything together
