Stuffed speculoos baked apples

A fine baked apple is the best thing the winter has to offer. Filled with crumbled speculoos cookies, nuts and served with a cold vanilla sauce and delicious speculoos crumble. Ingredients (6 portions):

6 red-cheeked, tart apples

100g almond kernels

handful of pecan nuts

50g butter vegan

½ tsp cinnamon

350g speculoos

150ml orange juice

1 tbsp lemon juice

Optional: Vanilla sauce

Preparation:

  1. First wash the apples thoroughly, cut off the tops and hollow out the apples generously
  2. Now roast the almond kernels and pecan nuts in a pan without fat until golden brown and then chop into small pieces with a knife
  3. Then crush the Spekulatius cookies with a corrugated stick or similar, add the nuts, melted butter and 4 to 5 tablespoons of orange juice and mix well
  4. Place the apples in a baking dish and fill with the mixture
  5. Next, bring 150 ml orange juice and 2 tbsp lemon juice to the boil and pour over the apples in the dish
  6. Then place in the oven at 180°C for 25 minutes, put the lid on in between and bake for another 10-12 minutes
  7. Arrange the baked apple on a plate, pour over the optional vanilla sauce and top with the remaining filling
