It's finally rhubarb time! This delicious vegetable can be used in a variety of ways and brings a new zest to your everyday diet. These delicious overnight oats with strawberries and rhubarb are a super tasty breakfast on warm summer days or a delicious dessert in the evening. Ingredients (2 portions):
For the rhubarb compote:
300g rhubarb
2 tbsp erythritol
2 tbsp water
the contents of a vanilla pod
For the parfait:
300g strawberries
100g oat flakes
375ml oat or almond milk
2 tbsp chia seeds
1 tsp agave syrup
Muesli
Coconut yogurt (optional)
Preparation:
- Place the rolled oats in a bowl with the chia seeds, agave syrup and plant-based milk of your choice and mix everything together thoroughly
- Wash the rhubarb and then cut it into small cubes
- Boil the rhubarb with water, erythritol and vanilla in a pan
- Meanwhile, cut the strawberries into small pieces
- Pour the cooled compote into two small glasses and top with the strawberry pieces and the prepared oats
- Then top with coconut yoghurt and muesli
