This tomato soup is not only super tasty, but also quick to prepare. It is ideal as a light, warm meal on cool spring evenings or as a tasty starter. This gentle recipe is also suitable for juice cleanse preparation, as it prepares you perfectly for the liquid food. Ingredients (4 portions):
1 kg round or beef tomatoes
1 red bell pepper
1 small chili
2 garlic cloves
2 onions
oil
5g fresh basil
3 tbsp tomato puree
vegetable stock
salt
pepper
optional: vegetable cream
Preparation:
- Wash the tomatoes, peppers and chili pepper
- Then cut everything into small pieces
- Peel the onions and garlic and chop them up too
- Heat some oil in a pot at medium temperature
- Sauté the garlic, onions and chili pepper until the onions are translucent
- Then add the tomatoes, peppers, fresh basil, oregano and lovage (if using) and tomato purée
- Sauté everything for approx. 5 - 10 minutes
- Cover everything with vegetable stock and leave to simmer for 60 minutes
- Puree the ingredients into a creamy soup and season with salt and pepper to taste
- Serve warm and top with plant-based cream if desired
