    Prepare the oven: Preheat the oven to 180 °C top/bottom heat. Lightly grease a small baking dish (approx. 18-20 cm) or line with baking paper.

    Beat the eggs until light and fluffy (important!): Beat the eggs with a hand mixer for 2-3 minutes until they are really frothy, lighter in color and much more voluminous. → This will give them a fluffy consistency later on.

    Carefully fold in the skyr: Slowly stir the skyr into the egg mixture - do not beat too vigorously to maintain the airiness.

    Work in the almond flour: Carefully fold in the almond flour. If the batter is very thick, add 1-2 tablespoons of liquid.

    Baking: Pour the batter into the tin and smooth out. Bake for 22-25 minutes until the pancake is golden brown and has risen slightly. → It will collapse slightly after baking - this is normal.

    Leave to rest briefly: allow to cool for 5-10 minutes, then serve.
