- 3 red peppers
- 1 garlic clove
- 1 onion
- 1 tbsp tahini paste
- paprika powder
- Dried oregano
- Fresh parsley
- Cashew nuts (to garnish)
Step-by-step instructions
- Preparing the ingredientsWash the peppers, cut them in half and remove the seeds. Peel and roughly chop the onion and garlic.
- BakePlace the peppers skin side up on a baking tray lined with baking paper, spread the garlic and onion on top and bake at 200 °C fan oven for 15-20 minutes.
- Cook pasta: Meanwhile, cook the fusilli according to the packet instructions.
- Prepare the sauceTake the tray out of the oven, put the peppers, garlic, onion and tahini in a blender and puree everything to a smooth sauce.
- Roast the cashew nuts: Toast the cashews in a hot pan without oil until golden brown.
- ServeMix the cooked fusilli with the paprika sauce, arrange on plates and garnish with the roasted cashews and fresh parsley.
