Ingredients (4 portions):
200g broccoli
70g red lentils
300ml vegetable stock
80g coconut milk
1 onion
2 cloves garlic
1 tbsp olive oil
2 tbsp yellow curry paste
1/2 red bell pepper
salt, pepper
10 cashew nuts
Preparation:
- Finely chop the onion and garlic
- Separate the broccoli into individual florets and dice the peppers
- Put some oil in a pan and sauté the onion and garlic in it
- Add the curry paste and mix it with the onion and garlic
- Deglaze with 300ml vegetable stock
- Now add the lentils and mix all the ingredients carefully in the pan
- Then stir the coconut milk into the ingredients in the pan
- Add the broccoli and peppers and bring everything to the boil in the pan
- Serve the curry on a plate and top with cashew nuts
