Veganes Zitronen-Risotto

Vegan lemon risotto

Ingredients (2 portions):

1 onion

1 garlic clove

1 lemon (organic)

100ml dry white wine 

Approx. 500ml vegetable stock

Approx. 170g risotto rice

2 tbsp vegan butter

40g vegan parmesan

salt

pepper

Dill 

Preparation:

  1. First chop the onion and garlic
  2. Now fry the rice, onion, garlic and butter briefly in a pan over a high heat
  3. Then deglaze with white wine and the vegetable stock and reduce the heat
  4. Then add the lemon zest, juice and zest to the risotto and allow everything to simmer gently
  5. Stir constantly so that the risotto does not burn
  6. As soon as the liquid has reduced, stir in the Parmesan and dill until everything is nice and creamy
  7. Now garnish on a plate with a little lemon zest, dill and pepper
  8. Your delicious risotto is ready! Enjoy the taste.
