Dieses mediterrane Hähnchenrezept vereint saftig gefüllte Hähnchenröllchen mit frischen Kräutern, würzigem Feta und einer aromatischen Brokkoli-Bacon-Pfanne. Proteinreich und voller Geschmack bringt es das Flair der Mittelmeerküche direkt auf deinen Teller – ideal für ein gesundes, ausgewogenes Mittag- oder Abendessen, das schnell gelingt und satt macht.

    Chicken breast fillet
  • 80 g
    Feta cheese (half for filling, half for topping)
  • 1 Handful
    Basil
  • Salt & pepper
  • 250 g
    Broccoli
  • 6
    Cherry tomatoes
  • 4 Slices
    Breakfast bacon
  • 30 g
    Walnuts
  • Something
    Olive oil

    Cut the chicken breast open lengthways (butterfly cut) and flatten slightly. Season with salt and pepper. Spread the feta and basil evenly over the chicken, roll up tightly and secure with toothpicks.

    The rolls at 180 °C for approx. 15-18 minutes Cook in the Airfryer until golden brown and cooked through.
    (Tip: Optionally brush lightly with oil for extra color).

    Heat the oil in a large frying pan. Fry the red onion strips, bacon & walnuts for approx. 2 minutes. Add the broccoli florets and fry for approx. 5-6 mins. until the broccoli is al dente and lightly browned.
    Finally, fold in the cherry tomatoes and allow to simmer briefly (do not overcook).

    Spread the broccoli and bacon mix on plates, arrange the chicken rolls on top. Sprinkle with the remaining feta and top with fresh basil to taste.
