Stuffed portobello mushrooms

Do you fancy mushrooms and don't know how to prepare them? Then you've come to the right place! Here is a quick and easy recipe for delicious stuffed mushrooms. Whether in the oven or on the grill, they are low carb, gluten-free, lactose-free, vegan and are a real eye-catcher.

Ingredients (2 portions):

2 large portobello mushrooms

1 shallot

1 small zucchini

feta cheese

Dried tomatoes

Walnuts

Tomato sauce

Grated cheese vegan

Preparation:

  1. Clean the mushrooms and remove the stalk

  2. Now chop the onion, zucchini and sun-dried tomatoes into small pieces

  3. Then place the feta cheese in a bowl, crumble and add the chopped vegetables and mix together

  4. Now place the mushrooms in a casserole dish and fill with the mixture

  5. Finally, cover the stuffed mushrooms with the tomato sauce, top with grated vegan cheese and bake in the oven at 200°C for approx. 18-20 minutes

  6. Serve with side dishes of your choice and enjoy!
