Ingredients (2 portions):
2 large portobello mushrooms
1 shallot
1 small zucchini
feta cheese
Dried tomatoes
Walnuts
Tomato sauce
Grated cheese vegan
Preparation:

Clean the mushrooms and remove the stalk

Now chop the onion, zucchini and sun-dried tomatoes into small pieces

Then place the feta cheese in a bowl, crumble and add the chopped vegetables and mix together

Now place the mushrooms in a casserole dish and fill with the mixture

Finally, cover the stuffed mushrooms with the tomato sauce, top with grated vegan cheese and bake in the oven at 200°C for approx. 18-20 minutes
