Sweetening ice cream without sugar: how does it work?
There are numerous alternatives for sweetening ice cream without sugar, without sacrificing taste and texture.
1. natural sweeteners
- Fruits and fruit pureesFruits are naturally sweet and contain fructose as well as fiber, vitamins and minerals. Bananas, mangoes, berries and dates are ideal for adding natural sweetness to ice cream. They can either be pureed and incorporated directly into the ice cream mixture or added in small pieces. It's even easier if you use the LiveFresh juices or shots as a base for your ice cream - the fruit in the juice makes the ice cream nice and sweet and gives it a delicious fruity taste.
- Honey and maple syrupAlthough these sweeteners contain sugar, they are of natural origin and offer a variety of flavors. They can be used in smaller quantities as a substitute for refined sugar.
- SteviaThis plant-based sweetener is calorie-free and has a significantly higher sweetening power than sugar. However, it should be used sparingly as an excess can leave a bitter aftertaste.
2. sugar alcohols
- Erythritol and xylitolThese sugar alcohols have the advantage that they have little effect on blood sugar levels and are lower in calories than sugar. Erythritol has about 70 % of the sweetening power of sugar and generally does not cause any digestive problems. Xylitol is almost as sweet as sugar, but can have a laxative effect in larger quantities.

- Sucralose and aspartameThese synthetic sweeteners are very sweet and calorie-free. They are often used in the food industry and are heat resistant. However, there are concerns about their long-term effects on health, so they should be used sparingly.
Sugar-free ice cream yourself make - Recipe
Ingredients (8 ice creams):
- 1 LiveFresh Juice or 2 LiveFresh shots - e.g. Sommer Gefühle or Sunshine Berry
- approx. 30g vegan yoghurt
- If required, 1 pinch of sugar substitute - e.g. erythritol
- Berries of your choice - e.g. raspberries, redcurrants
Other:
- Ice cream mold
- Wooden ice cream sticks
Preparation:
- Layer the juice, the vegan yogurt (mixed with some sugar substitute if you like) and the berries alternately in the ice cream mold until it is filled
- Place the ice cream in the freezer for at least 8 hours
- Ready - yummi!
