Ingredients (2 portions):
2-3 carrots
1 zucchini
5-6 spring onions
150g mushrooms (e.g. oyster mushrooms)
1 cup fresh green soybeans (edamame)
2-3 tbsp tamari
1 tsp curry paste
1 tbsp peanut butter
200g wide rice noodles
1 lemon
coconut oil
Preparation:
- Cook the rice noodles according to the packet instructions.
- In the meantime, cut the carrots, zucchinis and mushrooms into thin strips (you can use a paring knife, for example, to make thin strips). Then cut the spring onions into rings.
- Pour some water and coconut oil into a hot wok and fry the carrots in it.
- Then add the mushrooms, zucchinis, spring onions and green soybeans to the wok and allow everything to cook well.
- Deglaze with tamari and stir in the peanut butter and curry paste.
- Finally, add the drained rice noodles and fold them in. Garnish with fresh lemon and enjoy this delicious dish!
