This delicious, vegan soup is super quick and can be prepared in just a few steps. It is perfect for incorporating into a healthy everyday diet. Ingredients (4 portions):
Soup:
600g carrots
2 oranges
30g ginger
2 onions
1 garlic
400ml white wine
600ml vegetable stock
optional: tomato paste
topping:
Vega cream
Chives
Pine nuts
Preparation:
- Wash the carrots and then cut them into bite-sized pieces.
- Grate the ginger, dice the onions, chop the garlic and add everything to the carrots in a bowl.
- Grate the orange zest from the two oranges and add it to the other ingredients in the bowl.
- Pour some oil into a pan, add all the ingredients you have prepared so far and fry them.
- Deglaze with a white wine of your choice and add the vegetable stock.
- You can now optionally add tomato puree.
- Bring the ingredients to the boil in the pan for approx. 15-20 minutes and puree them after adding the fresh orange juice from 2 oranges.
- Plate up the soup and serve with crème vega, chives and pine nuts.
