Vegan beetroot couscous salad

Ingredients (4 portions):

150g beetroot

125g couscous

175ml vegetable broth

2 ½ tablespoons of lemon juice

3 tablespoons of parsley

2 tablespoons of mint

½ teaspoon salt

pepper

150g vegan feta cheese

300g cherry tomatoes

3 spring onions

    Preparation:

    1. Put the couscous in a large bowl, pour over with the boiling broth and let it pull it for 5 - 10 minutes. Stir around in between with a fork
