It is vegan, full of vitamins and can be prepared in no time at all - making it the ideal after-work recipe. Ingredients (4 portions):
1 large red onion
1 garlic clove
1 small Hokkaido pumpkin
1 yellow bell pepper
1 large zucchini
2-3 tbsp olive oil for frying
1 tsp dried oregano
1 tin of chopped tomatoes
Fresh parsley
pepper
Sea salt
Side dish of your choice (e.g. wild rice)
Preparation:
- First peel the onions and garlic, roughly chop the onions and finely slice the garlic
- Then wash the vegetables and cut into small bite-sized pieces
- Now pour the olive oil into a large preheated pan and sauté the onions and garlic briefly, then add the pumpkin, peppers and zucchini and sauté for about 6 minutes, turning occasionally
- Finally, add the spices and chopped tomatoes and simmer for another 10 minutes on a medium heat
- Now just serve and enjoy!
