Vegan pumpkin and vegetable pan

Fall time is pumpkin time. Since fall is just around the corner, we have created a matching vegan pumpkin and vegetable pan prepared for you. It is vegan, full of vitamins and can be prepared in no time at all - making it the ideal after-work recipe. You can also include this recipe in your preparation and follow-up work for the juice cleanse meals. Healthy eating can be so easy!

Ingredients (4 portions):

1 large red onion

1 garlic clove

1 small Hokkaido pumpkin

1 yellow bell pepper

1 large zucchini

2-3 tbsp olive oil for frying

1 tsp dried oregano

1 tin of chopped tomatoes

Fresh parsley

pepper

Sea salt

Side dish of your choice (e.g. wild rice)

Preparation:

  1. First peel the onions and garlic, roughly chop the onions and finely slice the garlic
  2. Then wash the vegetables and cut into small bite-sized pieces
  3. Now pour the olive oil into a large preheated pan and sauté the onions and garlic briefly, then add the pumpkin, peppers and zucchini and sauté for about 6 minutes, turning occasionally
  4. Finally, add the spices and chopped tomatoes and simmer for another 10 minutes on a medium heat
  5. Now just serve and enjoy!
