Ingredients (4 portions)

For the potatoes:

  • 500 g small potatoes
  • 1 tbsp olive oil
  • salt
  • pepper

For the salad dressing:

  • 3/4 cup Greek yogurt
  • 2 tsp mustard
  • 1/4 cup vegan mayo
  • Juice of 1/2 large lemon
  • 1 clove garlic (minced)
  • 1 tsp paprika powder
  • salt
  • pepper

For the salad:

  • 1 cucumber
  • 2 stalks of celery
  • 1 small red onion
  • Fresh parsley (chopped)
  • Fresh dill (chopped)
  • 1 bunch of spring onions

Preparation:

  1. Preheat: Preheat the oven to 200 °C.
  2. Prepare the potatoes: Boil the potatoes until soft, place them on a baking tray lined with baking paper and mash them flat.
  3. Bake the potatoes: Drizzle the smashed potatoes with olive oil, season with salt and pepper and bake for approx. 40-50 minutes until golden brown and crispy.
  4. Cut the vegetables: While the potatoes are in the oven, wash the cucumber and celery and roughly chop them together with the onion and fresh herbs.
  5. Prepare the dressing: Mix all the ingredients for the salad dressing in a bowl.
  6. Serve the salad: Place the crispy potatoes and chopped vegetables in a large bowl, add the dressing and mix everything well.
