Vegan chickpea and broccoli patties

These broccoli and chickpea patties are not only delicious, but at the same time represent a vegan and healthy alternative which are easy to prepare. With broccoli, chickpeas, onions, garlic and spices, these patties are not only tasty, but also healthy. rich in protein and dietary fiber. With a pinch of vegan parmesan cheese, these patties a real treat.

Ingredients (10 patties):

400g broccoli

1 tin of chickpeas

1 onion

1 garlic clove

Vegan parmesan cheese

Panko breadcrumbs

1 teaspoon cumin

2 tsp paprika powder

1 tsp pepper

½ tsp salt

½ tsp coriander seeds

1 linseed egg (cover 2 tablespoons of crushed linseed with water and leave to infuse)

Preparation:

  1. Drain the chickpeas

  2. Now peel the onion and garlic clove and cut into small cubes

  3. Wash and chop the broccoli

  4. Put everything together in a bowl and mix well with your hands

  5. Finally, form small patties and fry them in a hot pan until golden brown on both sides

  6. Serve with a dip of your choice
